The Open Kitchen was conceived as an essential platform for creating dynamics of integration among the public that frequented Casa Gallina. It offered a space for critical reflection and collective action about everyday practices that were linked not only to the culture and creativity inscribed in culinary art, but also that principally focused on the importance of rethinking habits of food consumption and the social rituals and forms of political and economic participation that are established around food.
